Did You Know Indian Cuisine Had Great Ice Cream?

Kulfi is the most popular ice cream in all of India. Kulfi is a traditional Indian-style ice cream. Probably the difference between “American style” ice cream and Kulfi, is that Kulfi isn’t whipped. It also contains less air than ice cream (which also makes it more solid). One of the most common garnishes with Kulfi is chopped pistachios. That not only makes it a healthier option than ice cream, but a much more unique style of ice cream. Kulfi is also typically frozen in what we call “cone shaped Kulfi molds.” This delicious treat is traditionally served in ‘matka’, or an ‘earthen cup.’ You can buy Kulfi in pre-made molds that can be found in most Indian grocery or convenience stores. On an interesting note, the word ‘kulfi’ comes from the Persian term for a covered cup. This makes Kulfi even more of an internationally beloved treat!

Here Are Some Other Cool Facts About Kulfi (gathered from Reader’s Digest):

  1. Kulfi is a South Asian frozen dessert made from boiled-down milk sweetened with sugar or corn syrup. No need to churn-it sets, dense and creamy, like frozen custard.
  2. In India, Kulfiwala’s sell Kulfi in the street. Meanwhile, their wares are kept frozen in an earthenware pot of ice and salt.
  3. Kulfi dates back to the 16th century, when Mughal emperors would feast on the dessert.
  4. Cylindrical metal moulds give the thick dessert an ice-pop form: Warm them with your hands to free the sweet treat.
  5. Traditionally it was served on a banana leaf or in a terracotta cup.
  6. Classic flavourings include mango purée, ground pistachios, delicately perfumed saffron, vanilla, rose or cardamom.
  7. To make “stuffed kulfi”: Pit a mango and remove most of the flesh, then fill the hole with kulfi base before wrapping and refreezing. Later, when you peel away the skin, you’re rewarded with an explosion of tangy fruit and spiced creamy sweetness.
  8. Peanut, tamarind, pomegranate and avocado are more experimental variations.
